There are a lot of complicated “bowl” recipes out there: Mediterranean Bowl, Quinoa Bowl, Buddha Bowl, Green Goddess Bowl and my favorite, the unrepentant Cheeseburger Bowl. I get excited until I read the ingredient list and then I get overwhelmed. It feels like a bait and switch. A meal in a bowl should be simple, unfussy and delicious. With minimal to no cooking involved.
That’s what this is. Think of it more as an idea to play around with than an exact recipe.
Microwave some frozen corn (ideally fire roasted). Or use cooked corn fresh off the cob if you have it! Add a scoop of cooked brown or white rice. Add some black beans (if using canned, rinse first). Dollop on your favorite salsa, sprinkle on some scallions and cilantro and if you are lucky enough to have a ripe avocado, throw that in too. Serve with tortilla chips, ripe nectarines and a fruity summer seltzer.
PS I want to publish a personality test based on how you eat your bowl. Those who mix all the ingredients together before eating? High on extraversion and spontaneity, low on conscientiousness. Those who meticulously keep all the components separate and methodically eat from each little section? High on neuroticism and attention to detail, low on flexibility and openness to new experiences.
