Nacho Meatballs
Chips, cheese and salsa are all thrown together to make these delicious baked meatballs. The ground turkey allows you to pretend it is healthy. Also, there is nothing that feels as good after a long day as bashing the hell out of a bag of chips with a rolling pin. And that’s all I’m going to say about that.
3 cups (150 g) corn tortilla chips with salt 1 pound ground turkey 1 cup salsa 1 teaspoon kosher salt 1 cup (110 g) grated cheddar cheese sauce 1/2 cup salsa 1 cup sour cream Preheat oven to 425 degrees. Put chips in a gallon ziplock and bash the hell out of them with a rolling pin until they are fine crumbs. Mix all ingredients in a large bowl, then shape into golf ball size balls and place on parchment lined rimmed baking sheet. Bake until they are cooked through, checking with a food thermometer after 20 minutes. To make sauce, mix salsa and sour cream and serve alongside meatballs.
