Like Denny’s, I serve breakfast all day long. It is my favorite meal. There are many good options: omelettes, huevos rancheros, pancakes and bacon. Sometimes yogurt parfaits (see berry bowls) or breakfast sandwiches (see breakfast sandwiches). Never breakfast pizza (see recipes I'll never make again).
These waffles are one of my favorite breakfast for dinner (brinner!) foods. The aroma of cooking waffles at 6 pm is a beautiful thing. And if you have purists in the household who insist on savory for dinner, this should satisfy them as well.
Ingredients
1 1/2 cups flour 1/2 cup whole wheat flour 1 tablespoon sugar 1 teaspoon baking powder 1 teaspoon salt 1/4 teaspoon dry mustard (optional but tasty) 4 tablespoon (1/2 stick) unsalted butter, melted 1 large egg 1 3/4 cups milk (I like to use 2% or part whole/part skim) 4 ounces sliced deli ham, minced 3/4 cup sharp cheddar cheese, grated 3 scallions, minced
Instructions
While your waffle iron heats up, whisk flours, sugar, baking powder, salt, and mustard together in a large bowl.
Add melted butter and egg and mix until incorporated.
Slowly whisk in milk, then stir in ham, cheese and scallion.
Cook according to your waffle maker's instructions. Ours cook in 3 minutes.
Note
This can be a slightly stickier batter because of the cheese, so I often use a little nonstick spray or wipe some vegetable oil inside the waffle iron to make sure the waffles detach cleanly. Serve hot. Sneak bites to the dog. Also great cold for lunch the next day in the unlikely event that you have leftovers.
